Today (12/29), China Airlines, a Taiwan-based carrier, announced its partnership with T+T to serve up an all-new co-branded in-flight menu in all classes and on all flights departing from Taiwan to Europe, Americas, and Oceania beginning January 1, 2026. T+T is famous for its contemporary Asian cuisine and has been awarded one star by the Michelin Guide Taiwan for six years running. The multi-cultural Asian style cuisine of T+T, based on the flavors of Southeast Asia while also incorporating local Taiwanese touches, greatly appealed to China Airlines as a theme for their culinary offerings. Travelers will be able to embark on a journey of culinary exploration during long-distance flights.

With Tapas x Tasting as its creative inspiration, T+T combines French techniques with the diverse culinary culture of Asia to compose a distinctive lexicon of flavors that utilizes spices, tanginess, fermentation, and multiple layers. The bold and original culinary style of T+T is a perfect match for China Airlines’ traveler-centric culinary philosophy. The latest collaboration involved multiple rounds of tests to validate the choice of ingredients, adjust the flavors, and fine tune the onboard reheating technique. The end result is the successful translation of fine dining to star-rated cuisine designed exclusively to be enjoyed 30,000 feet up in the air.

In Premium Business Class, the co-branded menu focuses on Wheel Pie Filled with Rose Duck and Truffle, a signature dish of T+T. This classic dish captures the romance of Taiwan’s street food and will provide travelers with a heart-warming surprise. The multi-layered set menu will feature crispy Oat-Crusted Cod with Green Peppercorn Sauce as its main, Green Papaya Salad with Scallop as the entree, and Stuffed Squid with Wax Apple and Herb Sauce, and Stuffed Beef Roll with Asian Spice Gel for the appetizer. These are accompanied by the comforting warmth of Chicken Broth with Dried Scallop Essence and Hainan-Style Coffee Dacquoise for a playful dessert. The dishes perfectly replicate the fine dining experience in the clouds.

The main for Premium Economy Class is Roasted Chicken Thigh with Red Curry Sauce and Rice which starts off with a base of special chicken rice served with a delicious roasted chicken thigh. The spiciness of the red curry mixed with a special spice blend provide the finishing touch. The signature dessert of Wheel Pie Filled with Rose Duck and Truffle transforms a staple of Taiwanese street food into a pleasant high-altitude surprise.

The main of Roasted Chicken with Yellow Curry Sauce and Rice for Economy Class serves special chicken rice with stewed chicken and yellow curry to provide travelers with a trans-cultural culinary experience. The Green Papaya and Pineapple Salad wakes up the taste buds with a mixture of sourness, sweetness, and crispiness. The three Thai-style sauce packets are kaya, lemon, and fish sauce.
